We are going to visit New Orleans and I might be able to convince her to try fishing again.
Can anyone recommend a good fly guide in Louisiana who can cope with a beginner too (without putting her off even more)

I never chartered fly fishing but here is a link to guides in Louisiana.
There is a section on saltwater fly fishing and fresh water fly fishing.
Some of the saltwater fly fishing are for offshore fishing while others are for fishing the saltwater marsh.
Big Fish LLC also owns a marina called the Breton Sound Marina in Hopedale,
LA. I launch my boat there all the time. They are very helpful with information on what's biting and where. This charter will fish the Biloxi Marsh and Breton Sound Area. This time of the year they are going to hit the ponds for redfish. Redfish are spawning. They will target trout as the day warms up.
